Low Carb/ Keto Waffles
While searching for the best low-carb waffle recipe, I quickly came to the conclusion that a lot of them were flavorless, too soft to eat, or just not appealing at all. Now, while some of you are probably going to tell me that I have lost my mind—well, I’m here to tell you that you are right. I have lost my mind, and honestly, probably more than once.
But you have to trust me: in order to get the crunchiest exterior while keeping the inside soft and moist, cheese is going to be your secret weapon. Yes, cheese!!! Most people are going to say, “Wait Mersy, cheese?! What if I can taste it?” and the answer is no, you are not even going to notice that it's there.
I honestly just use the Mexican blend style cheese from Costco, but you are more than welcome to use mozzarella too. I wouldn't recommend using parmesan or something like provolone because they have a stronger flavor profile, and of course you are going to taste them.
Now, if you are still not too sure about the cheese and you would like to make these low-carb/keto-friendly waffles without it, the answer is yes, you can. BUT! Do not expect them to have that crunch, because you are not going to find it. They are still going to have lots of flavor and they’ll be soft. If you are all about that, then by all means, go for it! No one is judging.
Low Carb/ Keto Friendly Waffle Recipe:
Ingredients:
8 oz Cream Cheese (room temperature)
8 ea Eggs (room temperature)
4 teaspoons Baking Powder
2 cups Almond Flour
1 tablespoon Vanilla Extract
2 tablespoons favorite Low Carb Sweetener
Directions:
Mix all ingredients together and let them sit for about 10 minutes.
When cooking the Low Carb/ Keto Friendly Waffles, start by adding a little of cheese on your waffle maker, add some of the Low Carb/ keto Friendly Waffle mix and add more cheese on the top.
Let it cook about two minutes and cool down.
You can freeze them for up to two weeks and to warm them up you can simply put them in a toaster for 5 minutes. You can also use an air flyer but adjust the temperature and the time. Enjoy!
